Rich in vitamins, antioxidants and fibre, Raspberries are a delicious fruit with many health benefits. They have a high concentration of ellagic acid, a phenolic compound that prevents cancer, thereby stopping the growth of cancer cells and eliminating the progress of some cancers.

You’ll never look at a Banana the same way again after discovering the many health benefits and reasons to add them to your diet. Bananas combat depression, make you smarter, cure hangovers, relieve morning sickness, protect against kidney cancer, diabetes, osteoporosis, and blindness.

Banana’s contain high levels of tryptophan, which is converted into serotonin — the happy-mood brain neurotransmitter. 🙂

These cookies are super quick and easy to make plus the many health benefits of raspberries, bananas and oats alone are enough to have you hopping mad for your daily bikkie or two..three..possibly even a forth.. You get the picture!

  • 70 grams Oats – note, 1 cup is equal to 80 grams
  • 1 Banana (a little on the ripe side is preferred)
  • 1/2 cup Raspberries (fresh or frozen)
  • A splash of Unsweetened Almond or Coconut Milk

Generally, it’s enough if you simply mash up the banana and oats and add in the raspberries, but I wanted the texture a bit finer, so here are the steps I took:

Preheat your oven to 180°C/360°F.

    1. Put half the oats and the banana in a blender and whiz away.
    2. Add a splash of rice / coconut milk if you need to.
    3. Add the rest of the oats and gently pulse to combine.
    4. If you have fresh raspberries, add them in by hand, if you have frozen ones, you can add them in an pulse once or twice so they get mixed into the dough.
    5. Line a baking tray with paper or a baking mat and use a tablespoon to place the dough on it.
    6. Bake for about 20 minutes or until you can lift up the cookies with a spatula without breaking (the cookies will still be soft – unless you bake them much longer).
